  • Combine the drumstick flowers, gram flour, green chilies, coriander, asafoetida, tomato puree, turmeric powder, curry powder, salt, and water in a large bowl. Mix well until a smooth, slightly thick batter forms. Adjust the water to achieve the desired consistency. The batter should be thick enough to coat the pakoras but not so thick that it's difficult to fry.

Fry the Pakoras

  • Heat the oil in a deep frying pan or kadai over medium-high heat. Once the oil is hot enough (a small piece of batter should sizzle immediately), carefully drop spoonfuls of the batter into the hot oil.

Cook the Pakoras

  • Fry the pakoras in batches, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side, or until they are golden brown and crispy. Use a slotted spoon to remove the pakoras from the oil and place them on a plate lined with paper towels to drain excess oil.
