Ingredients
Drumsticks & Preparation
- 250 gm Drumsticks fresh drumsticks, moringa, trimmed and cut into 2-inch pieces.
- 1 tsp Salt to taste, for boiling drumsticks
Spices & Aromatics
- 2 tbsp Mustard Oil
- 1 tsp Panch Phoron a blend of five spices (fenugreek, and nigella seeds), cumin, fennel, mustard
- 1 tsp Chili Paste green
- 1 tsp Turmeric Powder
- 1/2 cup Mustard Paste
Optional Additions
- 1 medium Onion finely chopped, for added flavor (optional)
- 1 tsp Chili Powder for extra heat (optional), red
- 1/4 tsp Garam Masala adds depth of flavor (optional)
Instructions
Prepare the Drumsticks
- Peel and trim the drumsticks. Cut them into 2-inch pieces. Boil the drumstick pieces in salted water until slightly tender (about 5-7 minutes).
Temper the Spices
- Heat mustard oil in a pan or pot over medium heat. Add the panch phoron and let it splutter.
Sauté Aromatics (Optional)
- If using, add the chopped onion and sauté until softened. Then, add the red chili powder if using and sauté for another 30 seconds.
Cook the Drumsticks
- Add the boiled drumsticks, turmeric powder, green chili paste, and salt to the pan. Stir well to coat the drumsticks evenly with the spices.
Simmer and Finish
- Cover the pan and simmer for 10 minutes, or until the drumsticks are tender. Stir occasionally to prevent sticking. Add the mustard paste, and cover again for another minute.
Serve
- Garnish with fresh cilantro and serve hot with steamed rice or your choice of flatbread.
