Eggless Whole Wheat Carrot Cake

Ingredients
- 125 gm Whole Wheat Flour
- 1/2 cup cup Carrot grated
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/8 tsp Salt
- 1/4 tsp Cinnamon Powder
- 120 ml Curd
- 80 ml Milk
- 100 gm Brown Sugar instead jaggery powder can also be used
- 1/4 cup Oil
- Nuts and berries chopped
Instructions
- In a bowl, take curd, milk, oil and powdered brown sugar. Mix together till sugar dissolves. Sieve dry ingredients in same bowl - whole wheat flour, baking powder, soda, salt, cinnamon powder.
- Combine dry ingredients with wet ingredients to prepare a smooth batter.
- Add in chopped nuts and grated carrot. Mix well.
- Grease a baking dish, line with parchment paper. Pour the batter and tap it for few times to level it up.
- Baking options:- Air fryer at 160 degrees for 20 min- Preheat cooker with 1 cup salt for 15-20 min on medium to high flame. Bake in cooker for 25-30 min- Oven at 180 degrees for 30-35 min
- Cool down the cake completely.
- Cut the cake in any desired shape and serve.
