Eggless Whole Wheat Carrot Cake

Ingredients
  

  • 125 gm Whole Wheat Flour
  • 1/2 cup cup Carrot grated
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/8 tsp Salt
  • 1/4 tsp Cinnamon Powder
  • 120 ml Curd
  • 80 ml Milk
  • 100 gm Brown Sugar instead jaggery powder can also be used
  • 1/4 cup Oil
  • Nuts and berries chopped

Instructions
 

  • In a bowl, take curd, milk, oil and powdered brown sugar. Mix together till sugar dissolves. Sieve dry ingredients in same bowl - whole wheat flour, baking powder, soda, salt, cinnamon powder.
  • Combine dry ingredients with wet ingredients to prepare a smooth batter.
  • Add in chopped nuts and grated carrot. Mix well.
  • Grease a baking dish, line with parchment paper. Pour the batter and tap it for few times to level it up.
  • Baking options:- Air fryer at 160 degrees for 20 min- Preheat cooker with 1 cup salt for 15-20 min on medium to high flame. Bake in cooker for 25-30 min- Oven at 180 degrees for 30-35 min
  • Cool down the cake completely.
  • Cut the cake in any desired shape and serve.
