Egg Curry

Comfort food, soul satisfying and all time favourite. Simple and easy egg curry to enjoy with piping hot steamed rice or chapattis.

  • Eggs - 4 hard boiled I made some slashes in the eggs
  • Onion - 1 cup chopped
  • Tomato - 1 cup chopped
  • Ginger Garlic paste - 1 tbsp
  • Bay leaf - 1 large
  • Garam masala powder - 1 tsp
  • Red Chilly powder - 1 tsp
  • Oil - 3 tbsps
  • Salt
  • Water as required


  • Heat oil in a pan. Add the bay leaf, ginger garlic paste and saute for a min.
  • Add the chopped onions and saute for a min. Add the chopped tomatoes and saute till it turns mushy.
  • Add salt to taste, turmeric powder, garam masala powder, red chilly powder and saute for over high heat for 2-3 mins.
  • Add ½ cup of water and cook over high heat till oil separates. Repeat this process 2-3 times until you get a smooth masala like paste.
  • Add the boiled eggs, sprinkle some water and cook over low heat for about 2 mins and take off the heat.
