Comfort food, soul satisfying and all time favourite. Simple and easy egg curry to enjoy with piping hot steamed rice or chapattis.

Ingredients
- Eggs - 4 hard boiled I made some slashes in the eggs
- Onion - 1 cup chopped
- Tomato - 1 cup chopped
- Ginger Garlic paste - 1 tbsp
- Bay leaf - 1 large
- Garam masala powder - 1 tsp
- Red Chilly powder - 1 tsp
- Oil - 3 tbsps
- Salt
- Water as required

Instructions
- Heat oil in a pan. Add the bay leaf, ginger garlic paste and saute for a min.
- Add the chopped onions and saute for a min. Add the chopped tomatoes and saute till it turns mushy.
- Add salt to taste, turmeric powder, garam masala powder, red chilly powder and saute for over high heat for 2-3 mins.
- Add ½ cup of water and cook over high heat till oil separates. Repeat this process 2-3 times until you get a smooth masala like paste.
- Add the boiled eggs, sprinkle some water and cook over low heat for about 2 mins and take off the heat.
