Ingredients
 

  • 2 cup Chickpeas soaked and boiled
  • 1 Red Onion
  • 1 Tomato
  • 1 Avocado
  • handful leaves Coriander fresh
  • Cucumber large 1
  • Salad Dressing for the classic
  • 2 tbsp Lemon Juice
  • 1 spoon Olive Oil table
  • 5 Black Pepper Corn
  • 1-2 tsp Salt or as per taste

Instructions
 

  • Soaking and boiling the chickpeas is the prerequisite to make this salad. Few tips to Soak and boil the chickpeas are shared in the Tips section.
  • Take Boiled chickpeas, Dice onion, tomato and cucumber and mix them.

  • Dice the avocado. I prefer to add it in the last so that they dont turn mushy while stirring.
  • How to Make Classic Salad Dressing -
  • Add lemon juice, olive oil, crushed pepper-corn and salt. Let it sit for 10 minutes.
  • Combine the salad dressing with Chickpeas and chop handful of coriander leaves and add to it.

  • Give a nice stir and then add avocado and stir it nice.

Recipe Notes

Soak with chickpeas overnight (minimum 6-8hours) in water so that water is just the double amount of the chickpeas.
In case you forget to soak chickpeas you can boil water and pour the steaming hot water on chickpeas and soak it for 2 hours, your chickpeas would be read.
PRessure cook the chickpeas for 10 minutes to boil them. Don’t forget to add salt while boiling chickpeas then you would need less salt in the salad.
