Chickpeas are the source of nutrition and powerhouse for proteins for vegans and vegetarians. Salad Recipes with simple salad dressing which are low in calories are must have if you are on a diet, detox and weight-loss program. This Chickpeas salad is loaded with Cucumber, onion, tomatoes and avocado to fill your tiffin with a healthy lunch option. Freshness of Coriander leaves and tanginess of lemon juice makes it a perfect snack idea too. So go for it. This Recipe is inspired by Holly from Spend with Pennies.
Soak with chickpeas overnight (minimum 6-8hours) in water so that water is just the double amount of the chickpeas.
In case you forget to soak chickpeas you can boil water and pour the steaming hot water on chickpeas and soak it for 2 hours, your chickpeas would be read.
PRessure cook the chickpeas for 10 minutes to boil them. Don’t forget to add salt while boiling chickpeas then you would need less salt in the salad.
