Healthy. Hearty. Heartwarming. The Chilli corn chowder is all of this and even more. This American dish is considered as the ultimate comfort food. Fresh corn, right from the corn on the cob is what gives it that ultimate taste. And the variations that one can try with it are endless and limitless.Simply put, Corn Chowder is a thick soup that has a good bite to it thanks to the addition of veggies, corn kernels, and even bacon.The spicing is fairly simple and the addition of cheese lends it a good amount of robustness.

Ingredients
- 1 Corn on the cob
- 1 Onion finely chopped
- 2 cloves Garlic finely minced
- 1 Potato peeled and cut into small pieces
- 1/4 cup Green Peas shelled
- 1/2 cup Milk
- 1-2 cubes Cheese grated
- 1-2 tsp Herbs cilantro/parsley/thyme fresh
- 1/4 tsp Pepper freshly ground
- 1/2 tsp Chilli Flakes can substitute with any chili of your choice smoked
- 1 tsp Butter melted
- 1-2 tsp Salt or as per taste

Instructions
- Steam the corn on the cob or cook it for 1 whistle in a pressure cooker. Using a sharp knife scrap off the kernels.
- Transfer 3/4th of the kernels into a mixer jar along with 1/2 cup warm water and grind it into a smooth paste.
Cooking
- Heat the butter in a saucepan. Add the garlic and onions. Saute till translucent.
- Add the potatoes and green peas. Cook for a while till the potatoes are half done.
- Add the corn puree along with the milk and let it simmer for 5-7 mins or till the potatoes are cooked.
- Stir in the remaining corn, pepper, chili flakes, cheese and the herbs.
- Remove from the flame and pour into the serving bowls.
- Garnish with more cheese, corn and pepper/chilli flakes.
- Serve immediately with some bread.

This can be frozen and pre-heated before serving.ย
