Instructions

Caramelize the Onions

  • Heat 1 tbsp of oil in a 10-inch oven-safe nonstick skillet over medium heat. Add the onion and cook, stirring occasionally, until deeply golden brown and caramelized (about 15-20 minutes).

Cook the Potatoes

  • Add the diced potatoes to the skillet with the caramelized onions. Season with salt, garlic powder, paprika, and black pepper. Stir to coat. Cover and cook over medium-low heat for 5-7 minutes, or until the potatoes are tender but still hold their shape.

Prepare the Egg Mixture

  • In a bowl, whisk together the eggs, milk, salt, and chili flakes until light and frothy.

Assemble and Bake the Frittata

  • Pour the egg mixture into the skillet with the onions and potatoes. Gently arrange the potatoes and onions on top to create a visually appealing pattern, if desired. Reduce heat to low, cover, and cook until the edges are set and the eggs are mostly cooked through, but still slightly wet on top (about 8-10 minutes).

Finish and Serve

  • Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 5-7 minutes, or until the eggs are completely set and the top is lightly golden. Sprinkle with fresh coriander before serving. Let cool slightly before slicing and serving.

Recipe Notes

Expert Tips for the Perfect Frittata:

  • For extra caramelization, add a pinch of sugar to the onions while cooking.
  • Don't overcrowd the pan; work in batches if necessary to ensure even cooking.
  • Using an oven-safe skillet makes transferring to the oven seamless.
  • Experiment with other vegetables! Bell peppers, spinach, or mushrooms would be delicious additions.
