Ingredients
 

Bread & Spread

Filling

  • 1 Onion medium-sized, thinly sliced
  • 4 Olives green and black marinated, halved lengthwise

Seasoning

  • 1/2 tsp Pepper black, freshly ground, optional
  • 1/2 tsp Pizza Seasoning italian seasoning blend is a good substitute

Instructions
 

Prepare the Onions and Olives

  • Lightly toast the bread slices and set aside.
  • Thinly slice the onion. In a pan, melt butter over medium heat. Add the sliced onions and sauté until they are softened and slightly caramelized, about 5-7 minutes.
  • Halve the olives lengthwise.

Assemble the Sandwich

  • Spread chipotle dressing evenly on one slice of toasted bread and mustard sauce on the other slice.
  • Layer the caramelized onions and olives onto one slice of bread.
  • Sprinkle with black pepper and pizza seasoning.

Toast and Serve

  • Top with the other slice of bread. Lightly butter the outside of the sandwich.
  • Toast the sandwich in the same pan, over medium heat, until golden brown and the cheese is melted (if using cheese). This will take about 2-3 minutes per side.
  • Serve immediately and enjoy!
