Ingredients

- 1 cup Bottle Gourd grated
- 1 cup Pumpkin grated
- 1/2 cup Carrot grated
- 1 Onion medium-sized, chopped

- 6 Eggs large
- 1/2 cup Cheddar Cheese shredded
- 1/2 cup Mozzarella Cheese shredded
- 1/4 cup Milk whole milk or milk alternative
Instructions
Prepare the Vegetables
- Sauté the chopped onion in butter and olive oil for about a minute until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the grated bottle gourd, pumpkin, and carrot. Season with salt and pepper. Cook for 2-3 minutes, until slightly softened but still retaining some texture.
- Remove from heat and set aside to cool slightly.
Prepare the Egg Mixture
- In a large bowl, whisk together the eggs and milk until light and frothy.
- Stir in the shredded cheddar and mozzarella cheeses.
Combine and Bake
