  • 1 tbsp Olive Oil
  • 2 tbsp Butter unsalted
  • 1 tsp Herbs italian seasoning or a mix of oregano, and thyme, basil, dried
  • 1/2 tsp Pepper Flakes or to taste, red
  • 1/2 tsp Pepper freshly ground, black
  • 1.5 tsp Salt or to taste
  • 4 clove Garlic minced

Instructions
 

Prepare the Vegetables

  • Sauté the chopped onion in butter and olive oil for about a minute until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
  • Add the grated bottle gourd, pumpkin, and carrot. Season with salt and pepper. Cook for 2-3 minutes, until slightly softened but still retaining some texture.
  • Remove from heat and set aside to cool slightly.

Prepare the Egg Mixture

  • In a large bowl, whisk together the eggs and milk until light and frothy.
  • Stir in the shredded cheddar and mozzarella cheeses.

Combine and Bake

  • Add the cooled vegetable mixture to the egg mixture. Stir in the dried herbs, red pepper flakes, and salt and pepper to taste. Mix well to combine.
  • Pour the mixture into a greased 8-inch oven-safe skillet or baking dish.
  • Bake in a preheated oven at 350°F (180°C) for 30-35 minutes, or until the frittata is set and lightly golden brown.

  • Let the frittata cool slightly before slicing and serving. Enjoy warm!
