Ingredients
For the Onion Bhaji Batter
- 1 cup Gram Flour besan
- 1/4 cup Rice Flour
- 1 tsp Asafoetida hing
- 1 tsp Chili Powder adjust to your spice preference, red
- 1 1/2 tsp Salt or to taste
- 1/2 cup Water add more as needed to reach desired consistency
- 2 tbsp Idli Batter adds fluffiness. can substitute with 1 tablespoon of yogurt, optional
Instructions
Prepare the Batter
- Combine gram flour, rice flour, asafoetida, red chili powder, and salt in a large bowl. Gradually add water and idly batter (or yogurt), mixing until a smooth, slightly thick batter forms. Let the batter rest for 15 minutes.
Prepare the Onions
- Peel and thinly slice the onions. For best results, place the sliced onions in the refrigerator for 10 minutes to prevent them from breaking apart during frying.
Heat the Oil
- Heat the oil in a deep pan or kadai over medium heat. To test if the oil is hot enough, drop a small amount of batter into the oil; it should immediately sizzle and float to the surface.
Fry the Onion Bhaji
- Carefully dip each onion slice into the batter, ensuring it's fully coated. Gently place the coated onion slices into the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, turning occasionally.
Drain and Serve
- Remove the fried onion bhaji from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite chutney or ketchup. Enjoy!
Recipe Notes
Expert Tips for Perfect Onion Bhaji
- Thinly sliced onions are key: The thinner the slices, the crispier the bhaji will be.
- Don't overcrowd the pan: Frying in batches ensures even cooking and prevents the bhaji from becoming soggy.
- Adjust the spice level: Feel free to increase or decrease the amount of red chili powder to suit your taste.
- Experiment with additions: Add finely chopped cilantro, ginger, or green chilies to the batter for extra flavor.
