Ingredients
Avocado Base
- 2 Avocados hass avocados preferred, ripe
- 2 tbsp Lime Juice
Aromatics & Vegetables
- 1/4 Onion finely chopped, red
- 2 tbsp Onions finely chopped, green, white and green parts separated
- 1/2 Tomato finely chopped
- 1/4 Bell Peppers finely chopped (any color)
- 1/2 Jalapeño Pepper finely chopped, remove seeds for less heat
Seasoning & Herbs
- 1 tsp Lemon Zest
- 2 clove Garlic minced
- 2 tbsp Coriander chopped, fresh
- 1/2 tsp Salt to taste
- 1/4 tsp Pepper black, freshly ground, to taste
Serving Suggestion
- 1 bag Tortilla Chips or nachos
Instructions
Prepare the Avocados
- Cut the avocados in half, remove the pits, and scoop the flesh into a medium-sized bowl.
Mash and Season
- Lightly mash the avocados with a fork. Add the lime juice immediately to prevent browning. Stir to combine.
Add Remaining Ingredients
- Add the minced garlic, finely chopped red onion, bell pepper, tomato, jalapeño, cilantro, lemon zest, salt, and pepper to the mashed avocado. Gently fold all the ingredients together until well combined. Taste and adjust seasoning as needed.
Serve
- Serve immediately with tortilla chips or nachos. Garnish with extra cilantro and a sprinkle of chopped green onions, if desired.
