Prepare the Vegetables

  • Finely chop the onions, tomatoes, green chilies, and coriander leaves.
  • Grate the potatoes and carrots.
  • Grate the cheese.

Sauté the Vegetables

  • Heat olive oil (or butter) in a large oven-safe skillet over medium heat. Add onions and coriander, sauté until onions are golden brown.
  • Add tomatoes and green chilies; cook until softened. Stir in grated potatoes and carrots; cook until tender and slightly dry.
  • Season with salt to taste.

Assemble and Cook the Frittata

  • Spread the cooked vegetables evenly in the skillet.
  • Pour the egg mixture over the vegetables. Gently tilt the pan to spread evenly.
  • Sprinkle grated cheese over the top.
  • Cover the skillet and cook over low heat for 5-6 minutes, or until the eggs are set around the edges.

Finish Cooking

  • Carefully flip the frittata (optional, for even cooking). Cook for another 2 minutes.
  • Remove from heat and let stand for a minute before slicing and serving.

Serve

  • Serve hot, garnished with fresh coriander (optional). Enjoy with tomato ketchup or mayonnaise.
