Ingredients

- 1 tsp Cumin Seeds
- 1 tsp Ginger finely grated
- 1 tsp Garlic finely grated
- 1-2 Chili adjust to taste, finely chopped, green
- 1 tsp Coriander Powder
- 1/2 tsp Turmeric Powder
- 1/2 tsp Chili Powder adjust to taste, red
- 1-2 tsp Salt or to taste
Fat & Yogurt
- 2 tbsp Vegetable Oil
- 1 tbsp Ghee clarified butter
- 1/4 cup Yogurt
- 1/2 cup Water
Instructions
Prepare the Yogurt Mixture
- In a small bowl, whisk together the yogurt and 1/4 cup of water until smooth and lump-free. Add the coriander powder, turmeric powder, red chili powder, and salt. Mix well and set aside.
Caramelize the Onions
- Heat the vegetable oil and ghee in a large pan or skillet over medium heat. Once hot, add the cumin seeds and allow them to sizzle for about 30 seconds.
- Add the grated ginger, garlic, and green chilies. Sauté for 1-2 minutes, or until fragrant and slightly softened.
- Add the sliced onions to the pan and stir to combine. Cook, stirring frequently, until the onions begin to soften and caramelize. This will take about 10-15 minutes. Reduce heat as needed to prevent burning.
Simmer and Serve
- Stir in the yogurt mixture and the remaining 1/4 cup of water. Bring to a gentle simmer, then reduce heat to low and cook for another 5-7 minutes, or until the onions are deeply caramelized and the sauce has slightly thickened.
