Beetroot Vegetable Soup: Serve your kids with this nutrients rich soup in winters made up of beetroot, spinach, beans, tomatoes etc. Beetroot boosts stamina, gives fibers, helps in detoxification, spinach low in calories and fat.

Carrot helps in improving vision and tomato gives vitamin C. This is excellent source of nutrients for kids and adults. I serve this at least 3 times in a week to help them fight winters.

Ingredients
 

  • 1 Beetroot chopped
  • Handful Spinach
  • 2 Tomatoes medium size chopped
  • 1 Onion medium size chopped
  • 1 Carrot chopped
  • 8 Beans chopped
  • 1 tsp Ginger chopped
  • 1 tsp Garlic chopped
  • 1 Green Chillies
  • Few Coriander
  • Salt according to taste
  • 2 cup Water

Instructions
 

  • Clean, wash and chop vegetables and keep aside

  • Now Take a pressure cooker add spinach leaves and all the ingredients along with salt and water
  • Pressure cook all these ingredients on medium flame for 15 -20 minutes and make sure to cook till 4 to 5 whistle.
  • Once it is done close the gas and keep the cooker aside for 10 Minutes
  • Now open the cooker and blend the vegetables nicely with a mathini or you can use hand blender
  • Now strain this mixture using stainer and transfer to a bowl
  • Before serving just boil this soup sprinkle some crushed black pepper and garnish with coriander leaves. Enjoy!

Recipe Notes

  • It’s your choice you can strain the soup or if you don’t want to waste the finer just blend it with blender and use it 
  • You can mix the Left over of soup in wheat flour along with salt, chilly and onion and form a dough. Prepare paratha with this dough it taste yum.
