Beetroots are loaded with nutrients. But most folks limit the intake of this vegetable to salads or maybe a vegetable juice at the most.
But beetroots are actually most versatile. They can go into anything right from your soups and starters, make their presence felt in the main course and finally creep into the desserts.
This simple and flavorful beetroot soup is infused with the goodness of coconut and few select spices which make it an ideal candidate for a detox.

Ingredients
- 1 Beetroot
- 2-3 Shallots
- 2-3 cloves Cloves
- 1 Bay Leaf
- 10 Peppercorns
- 1 clove Garlic
- 1 cup Coconut Milk
- 2 tsp Coconut Cream
- 1-2 tsp Salt (or as per taste)
- a drops Cooking Oil (of neutral flavored)

Instructions
- Put a saucepan on a medium flame. Add the few drops of oil.
- Add the spices and crushed garlic clove.
- Once the spices turn fragrant, add the beetroot.
- Add 2 cups water and season with salt.
- Let it simmer for about 25-30 mins.
- Use a hand blender to smash up the cooked vegetable. Or transfer to a tall blender jar which can withstand the heat. Blend.
- Transfer back to the saucepan and add coconut milk. Let it simmer for 5 minutes.
- Switch off the flame and add the coconut cream.
- Serve warm.
