Banana Semolina Fingers

Quick and easy snack which is prepared using raw bananas and semolina, seasoned with some spices and deep fried. It goes well with tomato ketchup. A very good option for an evening snack.

Ingredients
- Raw Bananas – 2 medium sized washed and steamed, grated or blended
- Fine semolina – 5tbsp
- Garlic Cloves – 3
- Ginger – 1 tbsp chopped or sliced
- Green Chillies – 3 medium hot or hot
- Coriander leaves – a handful + 1 tbsp finely chopped
- Sugar – 1tsp
- Lemon juice – 1 tsp
- Oil - 2 cups for frying
- Salt
- Water – ¾ cup for semolina
- Other ingredients – for serving - Tomato Ketchup or Any dip

Instructions
- Blend Coriander leaves. Garlic, ginger, green chilli into fine paste. Add lemon juice. Blend again. Keep aside.
- In a utensil or saucepan boil water. Add fine semolina. Stir it. Switch off the flame. Cover and keep aside for 5 – 7 minutes.
- Presser cook raw bananas for 2-3 whistles on medium flame. Allow stem to escape before opening the lid.
- Peel bananas and grate it or blend it.
- 5. In a deep bowl take soaked semolina, grated or blended banana, salt, prepared green paste, sugar and finely chopped coriander. Mix well until combined. Transfer this dough in the refrigerator for 10 minutes.
- Apply some oil on palms. Pinch a ball from the dough. Roll it between palms into thinly elongated logs or shape them like small fingers.
- In a wok or Kadhai, heat oil. Fry fingers on medium low heat until brown and crisp.
- Drain off and transfer on absorbent paper towel.
- Serve hot with any dip or tomato ketchup.
Notes
Use fine semolina for preparing fingers. Always soak it in hot water.
