Ingredients
Chicken & Aromatics
- 500 gm Chicken bone-in, skin-on thighs or a mix of thighs and drumsticks recommended
- 1 medium Onion sliced
- 2-4 Chili adjust to your spice preference; finely chopped, green
- 1 tbsp Ginger Paste
- 2 tbsp Garlic Paste
Gongura & Spices
- 2 cup Gongura Leaves fresh sorrel leaves; thoroughly washed and roughly chopped
- 1 tbsp Tomato Puree
- 1 tbsp Coriander Powder dhania
- 1 tsp Cumin Seeds jeera; lightly roasted before grinding is optional
- 1/4 tsp Turmeric Powder haldi
- 1/2 tsp Garam Masala
- 1/2 tsp Chili Powder adjust to your preference; optional, red
- 1.5 tsp Salt or to taste
- 1/4 cup Coriander dhania; chopped, for garnish
Instructions
Sauté Aromatics
- Heat oil in a pan or pot over medium heat. Add sliced onions and sauté until translucent. Add green chilies, ginger paste, and garlic paste; sauté for another minute until fragrant.
Cook Chicken
- Stir in tomato puree, chicken pieces, salt, and all spice powders except garam masala. Mix well to coat the chicken. Add water and bring to a simmer. Reduce heat and cook until the chicken is almost cooked through (about 20-25 minutes).
Add Gongura & Finish
- Add the chopped gongura leaves, mix well, and cook for another 5 minutes. Stir in garam masala and chopped coriander leaves. Cover and simmer until the chicken is fully cooked and the sauce has thickened slightly to your desired consistency. Taste and adjust seasoning as needed.
Serve
- Serve hot with steamed rice or roti.
