Ingredients
Mutton & Marinade
- 500 gm Mutton bone-in or boneless, cut into 1-inch pieces
- 1 tsp Chili Powder red
- 1/4 tsp Turmeric Powder
- 1/2 tsp Lemon Juice
- Salt to taste
Spice Blend
- 1 tsp Poppy Seeds
- 1/2 tsp Fennel Seeds
- 1/2 tsp Cumin Seeds
- 3 Peppercorns
- 1 tsp Coriander Seeds
- 1 inch Cinnamon Stick
- 2 Cloves
- 1 Cardamom Pod
Other Ingredients
- 1/4 cup Desiccated Coconut
- 3 tbsp Vegetable Oil
- 1 Onion finely chopped, large
- 1 tsp Ginger-Garlic Paste
- a few Curry Leaves
- 1 tsp Pepper Powder black
- 1 Chili finely chopped, green
- 1 Tomato finely chopped, large
- a few Coriander finely chopped, for garnish
- 2 cup Water for cooking the mutton
Instructions
Prepare the Mutton
- Wash and cut the mutton into 1-inch pieces. In a bowl, marinate the mutton with red chili powder, turmeric powder, salt, and lemon juice. Let it marinate for at least 20-30 minutes.
Roast the Spices
- Dry roast poppy seeds, cinnamon, cloves, cardamom, fennel seeds, cumin seeds, peppercorns, and coriander seeds in a pan over medium heat until fragrant. Remove from heat and add desiccated coconut; mix well. Let it cool completely. Grind this mixture into a coarse paste using a mortar and pestle or a spice grinder.
Cook the Mutton
- Add the marinated mutton pieces to a pressure cooker. Add 2 cups of water and pressure cook for 6-7 whistles. Allow the pressure to release naturally. Once cool, remove the mutton and set aside the cooking liquid.
Sauté Aromatics
- Heat vegetable oil in a pan or pot. Add chopped onions, green chilies, ginger-garlic paste, and curry leaves. Sauté until the onions turn light brown.
Add Tomatoes and Mutton
- Add finely chopped tomatoes and sauté until they become mushy and the oil starts to separate. Add the cooked mutton pieces and sauté well.
Simmer the Curry
- Stir in the ground spice paste, salt, the reserved mutton cooking liquid, and 1 cup of fresh water. Bring to a boil, then reduce heat to low and simmer until the gravy thickens and coats the mutton. Stir in black pepper powder.
Garnish and Serve
- Garnish with freshly chopped coriander leaves and serve hot with rice, chapati, or roti.
