  • 2 tbsp Coconut desiccated, dry
  • 2 tbsp Oil vegetable or coconut

Prepare the Rice

  • Pressure cook the basmati rice with water in a 1:2 ratio (1 cup rice : 2 cups water) for 3 whistles. Once the pressure releases naturally, fluff the rice with a fork and spread it on a wide plate to cool and prevent sticking. Add a little oil to the rice to further prevent sticking.

Roast and Grind the Peanut Mixture

  • Heat a pan over medium heat. Add peanuts and roast, stirring frequently, until light brown and fragrant. Remove from heat and let cool slightly.
  • Add roasted peanuts, sesame seeds, and desiccated coconut to a blender or food processor. Grind to a coarse powder. Set aside.

Temper the Spices

  • Heat oil in the same pan. Add mustard seeds and cumin seeds. Once they start to splutter, add black gram, bengal gram, and asafoetida. Sauté briefly until fragrant.
  • Add the dried red chilies and slit green chilies and curry leaves. Sauté for another 30 seconds until fragrant.

Combine and Serve

  • Add the cooked rice to the pan with the spice tempering. Mix well to combine.
  • Stir in the peanut powder and salt. Mix gently until the rice is evenly coated with the peanut mixture. Serve hot, ideally with a side of yogurt or raita.

  • For extra flavor, toast the sesame seeds separately before adding them to the peanut mixture.
  • Adjust the amount of chili according to your spice preference. Start with less and add more if needed.
