Ingredients
For the Spice Blend
For the Curry
- 2 cup Drumstick cut into 2-inch pieces
- 1 medium Onion finely chopped
- 2 tbsp Tamarind pulp
- 1 tbsp Jaggery
- 3 tbsp Sunflower Oil or gingelly oil (sesame oil)
- 1 tsp Turmeric powder, haldi
- 1/4 tsp Asafoetida hing
- 1 tsp Mustard seeds
- 2 tbsp Curry Leaves
- 1.5 tsp Salt or to taste
- 3 cup Water
Instructions
Prepare the Spice Blend
- Dry roast the coriander seeds, chana dal, urad dal, fennel seeds, cumin seeds, fenugreek seeds, red chilies, and black peppercorns in a pan over medium heat until fragrant. Let cool completely, then grind into a fine powder using a spice grinder or mortar and pestle.
Sauté Aromatics
- Heat 2 tablespoons of oil in a pan. Add asafoetida and mustard seeds. Once the mustard seeds start to splutter, add curry leaves and chopped onions. Sauté for about 1 minute until onions soften slightly.
Simmer the Curry
- In a separate bowl, dissolve tamarind pulp in 3 cups of water. Add salt and pour into the pan with the onions. Bring to a boil. Add the drumstick pieces and simmer for 10-12 minutes, or until tender but not mushy. Do not overcook.
Finish the Curry
- Stir in the prepared spice powder and jaggery. Simmer for another 5 minutes, or until the gravy reaches your desired consistency. Taste and adjust salt if needed. Serve hot with rice, dosa, or idli.
