- 1/2 tsp Pepper or to taste, white
- 1 tbsp Olive Oil
For the Lemon Butter Sauce
- 1/4 cup Lemon Juice freshly squeezed
- 2 clove Garlic minced
- 1 tbsp Parsley chopped fresh
- 1/4 tsp Pepper white
- 1/2 tsp Salt or to taste
- 2 tbsp Corn Flour
- 2-3 tbsp Water or as needed to thin the sauce
- 1 tbsp Sugar
- 1 tbsp Butter unsalted
- 1 tbsp Butter for searing
Instructions
Prepare the Lemon Butter Sauce
- Heat a small saucepan over medium heat. Add the lemon juice, minced garlic, chopped parsley, white pepper, salt, and sugar. Bring to a simmer.
- In a small bowl, whisk together the cornstarch and 2-3 tablespoons of water until smooth.
- Slowly whisk the cornstarch slurry into the simmering lemon mixture. Cook, stirring constantly, until the sauce thickens to your desired consistency. Add more water if needed.
- Remove from heat and stir in the 1 tbsp of butter until melted and incorporated.
Prepare the Fish
- Season the basa fillet generously with salt and white pepper.
- Heat the olive oil and 1 tbsp of butter in a large skillet over medium-high heat.
- Once hot, add the basa fillet to the skillet. Cook for 3-4 minutes per side, or until cooked through and flaky.
Assemble and Serve
- Transfer the cooked basa to a serving plate. Spoon the lemon butter sauce generously over the fish.
- Garnish with fresh parsley sprigs (optional) and serve immediately.
Recipe Notes
Expert Tips
- For extra flavor, marinate the basa in a mixture of lemon juice, garlic, and herbs for 30 minutes before cooking.
- Don't overcrowd the pan when searing the fish; this will lower the temperature and prevent proper browning.
- Use high-quality butter for the sauce to enhance its richness and flavor.
- Adjust the amount of salt, pepper, and sugar to your liking. A pinch of red pepper flakes can also add a nice kick.
