Ridge Gourd /Turai Chutney

This chutney combines the green vegetable plus protein from daal and makes it a very tempting and mouth watering side dish. You can eat it with idli, dosa or paratha or just take a generous helping with hot steamed rice and a blob of ghee and yummy chutney rice is ready.

Ingredients
  

  • 250 gms ridge gourd turai
  • 2 tablespoon of cooking oil
  • 5 to 6 whole red chillies you can reduce as per taste
  • 3 tablespoon of toor daal
  • 1/4 tsp hing powder
  • Tamarind the size of a small cherry
  • 5 to 6 sprigs of coriander or curry leaves
  • salt 1/2 tsp or as per taste

Instructions
 

  • Remove skin of the ridge gourd or u can retain it and cut into cubes. Heat oil in a pan and add daal, hing red chillies and saute for two mins till daal turns golden.
  • Now add the cut ridge gourd and tamarind and coriander sprigs and salt and saute on high flame for 5 minutes,. It will reduce a bit and water will ooze out of the gourd.
  • Remove on a plate and cool and then grind in the chutney jar to a smooth paste. Delicious chutney is ready to serve.
