THALIPEETH! A special Pune Maharashtrian Street food dish with full of nutrition and a healthy and tasty breakfast or snack. Thalipeeth is a type of spiced pancake most popular in Western India. It is very easy to make and can be prepared in many ways and that too in very less time. Bajra flour (Pearl Millet) is rich in protein, fiber, phosphorus, magnesium and iron while Lauki (Bottle Gourd) also have many health benefits as we all know. Here we come with some twist in our recipe by making the Thalipeeth with Bajra flour and Lauki so let us taste something new.

Ingredients
- Dough for
- 1 cup Pearl Millet Flour or bajra, or atta bajra atta รข
- 1 cup Whole Wheat Flour or atta atta รข
- 1/2 cup Sorghum Flour or jowar, or atta jowar atta รข
- 1 cup Bottle Gourd or lauki grated lauki รข
- 1/4 cup Onions chopped รข
- 1/2 cup Flat rice or poha soaked poha รข
- 1/2 leaves Coriander รข
- 1 tsp Green Chilli Paste รข
- 1 tsp red chili powder lal mirchi รข
- 1/2 tsp Garam Masala รข
- 1/2 tsp Coriander Powder or dhaniya dhaniya รข
- 1/4 tsp asafoetida or hing hing รข
- 1/2 tsp Salt รข, or as per taste
- 2 tsp Oil รข
- Water for kneading as required
- Other Ingredients: other ingredients
- 1/4 cup Sesame Seeds or til til รข
- 1/4 cup Oil รข

Instructions
- In a mixing bowl, take 1 cup of Pearl Millet flour (Bajra atta), 1 cup of Whole Wheat flour (Atta) and ยฝ cup of Sorghum flour (Jowar atta) followed by 1 ยฝ cup of grated Bottle Gourd (Lauki).
- Then add ยผ cup of chopped Onions, 1 tsp of Green Chilli Paste, 1 tsp of Red Chilli Powder, ยพ tsp of Garam Masala powder, ยฝ tsp of Coriander Powder, ยผ tsp of Hing and ยฝ cup of fresh Coriander leaves
- Furthermore, add 2 tsp of Oil then add ยฝ cup of soaked Flattened Rice (Poha) and mix well.
- Add ยพ tsp of Salt and use Water as required for kneading the soft dough.
- Cover the dough and allow the dough to rest for 30 Min
- In a preheated tawa, add 2 tsp of Oil then add ยฝ tsp of Sesame Seeds (Til).
- Take small portion of the dough and start rolling the Thalipeeth by tapping and pressing the dough with hand and make 5-inch roti.
- While pressing use Water if required as it sticks to the hand.
- Then apply 1 tsp of Oil over Thalipeeth.
- Cover the lid and simmer the gas on low flame for 5 Min.
- Flip over the Thalipeeth and roast from other side for more 5 Min on low flame without covering the lid.
- In a similar way, make all the Thalipeeths.
- Healthy Bajra Lauki Thalipeeth is now ready to serve hot with Curd, Raita or Pickle.

Recipe Notes
Add Water only if required as Bottle Gourd leaves the Water present in it. Adding Poha make the Thalipeeth crispy and delicious. Instead of Poha, you can use cooked Rice also.
