Festivals are the time when we prepare delicious food for the family. Kempu Chitranna is one such recipe. It is a traditional recipe from South Kanara region of Karnataka. Ingredients
  

  • 1 cup rice
  • 1/2 coconut
  • 2 teaspoon mustard seeds
  • 5-6 dry red chilly
  • 3 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • a pinch of asafetida
  • 1/4 teaspoon Turmeric Powder
  • 1 teaspoon bengal gram
  • 1 teaspoon urad dal
  • 6-8 cashew broken into pieces
  • 2 tablespoon groundnuts
  • Salt
  • a few curry leaves

Instructions
 

  • Wash rice and cook it in pressure cooker. The grains should be seperate. Once it is done, and the pressure releases by itself, put it in a plate to cool.
  • Grind coconut, mustard seeds and dry red chillies to a paste. Use some water.
  • Take oil in a pan. Add mustard seeds, as it crackles, put bengal gram, urad dal, turmeric powder and asafetida. After a few seconds put groundnuts, saute for a few seconds, then add cashew pieces and curry leaves.
  • Now, add the paste to it and saute for five minutes on a low flame. Once you get a good aroma, add salt, mix and switch of the stove.
  • Add rice to it. Mix gently. Kempu Chitranna is ready to serve.

Notes

  • Coconut used is fresh one. Do not substitute with dry dessicated coconut.
  • Adjust red chilly according to your taste.
