Festivals are the time when we prepare delicious food for the family. Kempu Chitranna is one such recipe. It is a traditional recipe from South Kanara region of Karnataka. It is delicious with a nice aroma. Celebrate the festival with this Kempu Chitranna or Red Rice.

Ingredients
- 1 cup rice
- 1/2 coconut
- 2 teaspoon mustard seeds
- 5-6 dry red chilly
- 3 tablespoon oil
- 1/2 teaspoon mustard seeds
- a pinch of asafetida
- 1/4 teaspoon Turmeric Powder
- 1 teaspoon bengal gram
- 1 teaspoon urad dal
- 6-8 cashew broken into pieces
- 2 tablespoon groundnuts
- Salt
- a few curry leaves

Instructions
- Wash rice and cook it in pressure cooker. The grains should be seperate. Once it is done, and the pressure releases by itself, put it in a plate to cool.
- Grind coconut, mustard seeds and dry red chillies to a paste. Use some water.
- Take oil in a pan. Add mustard seeds, as it crackles, put bengal gram, urad dal, turmeric powder and asafetida. After a few seconds put groundnuts, saute for a few seconds, then add cashew pieces and curry leaves.
- Now, add the paste to it and saute for five minutes on a low flame. Once you get a good aroma, add salt, mix and switch of the stove.
- Add rice to it. Mix gently. Kempu Chitranna is ready to serve.
Notes
- Coconut used is fresh one. Do not substitute with dry dessicated coconut.
- Adjust red chilly according to your taste.
