Sometimes the heart craves for simple soul food. Easy to make, tastes awesome.... Simple Kanda Poha. Facts about nutrition in this good old traditional Maharashtrian breakfast.. Rice = Carbohydrates ( Energy ) Boiled Potato = Fiber, Antioxidants, More Potassium than a banana, Vitamin C Green Chilly = Vitamins A, B6 , C, K Peanuts = Proteins Oil = Fats needed for skin and hair.

Ingredients
  

  • 1 cup Thick Poha washed and soaked for 5 minutes
  • 1 medium onion finely chopped
  • 2 tablespoon roasted and crushed peanuts The more the merrier
  • 10-12 fresh curry leaves
  • Green coriander leaves to garnish
  • 1 boiled potato chopped
  • Salt
  • 1 teaspoon of mustard seeds OR whole Jeera Both have their unique taste and I can't decide to go with which, every single time....!!
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon haldi powder
  • 1 green chilli finely chopped ( Deseed if you want to reduce its' spicy quotient )
  • juice of half a lemon

Instructions
 

  • Drain the poha in a colander for about 5-7 minutes. In a pan, add 1 teaspoon oil. Heat it on low flame. Add mustard seeds / jeera and let it splutter Add curry leaves, green chilli. Add the onion and let it cook for 5 minutes.
  • Add The boiled potato pieces. Add all dry masalas. Add the poha. Let it cook till well mixed uniformly. Toss in The peanuts.
  • Garnish With Green Coriander Leaves. Shut off gas. Sprinkle the lemon juice. Serve hot. Additional garnishing can be done by adding very finely chopped onion and nylon sev.

Notes

Can go in for Brown rice poha as well.
Toss in a few boiled veggies like peas, carrots etc if you like.
