Ingredients
  

  • Whole Wheat Flour
  • Carrots
  • Potatoes
  • Onions
  • Beans
  • Green Peas
  • Green Chillies
  • leaves Coriander
  • 1-2 tsp Salt or as per taste
  • Turmeric Powder
  • Garam Masala
  • Red Chilli Powder

Instructions
 

  • In a wide bowl, take whole wheat flour and salt. Mix it well and add required amount of water. i
  • Combine it to make a smooth and stiff paratha dough. Knead it well. Add two tablespoons of oil and again knead the dough well.
  • Knead it with the palm. Let this dough rest for half an hour.
  • Peel and cut potato, carrot into cubes. Chop beans and green chillies. Add salt and turmeric powder to them, add peas also. pressure cook them for three whistles.
  • Once cooled and pressure goes off, mash them using potato masher. If excess water is found, drain it and thn mash them.
  • Heat oil in a kadai, add chopped chillies and onion. Saute well. Add salt and turmeric powder.
  • Cook till the onions become soft, add mashed vegetables. Mix it well. Add garam masala and red chilli powder to it. Give a mix so that all the spices combine well with the vegetables.
  • Add coriander leaves and give a nice mix and off from the flame. This is the stuffing for the parathas. keep it aside.
  • Take a lemon sized portion of the dough. Roll it to 3"diameter.
  • Place a spoonfull of the above made stuffing. Seal with the edges.
  • Again roll it using a rolling pin, to 5" diameter. Heat non stick tawa, place the rolled paratha.
  • Cook for a minute or till you find small bubbles on it. Flip and cook for 2 to 3 minutes. Apply oil or ghee over it.
  • Repeat the same with rest of the dough. Serve Vegetable Paratahs with curd or pickle or Tomato KetchUp.
