This aromatic and flavorful restaurant style squid roast is a must try. Squid is cooked in an authentic Kerala style masala. A perfect accompaniment with appam, puttu, rice or even roti.

Ingredients
- Squid cleaned & cut – 1 cup
- Onion chopped – 2
- Tomato chopped – 2
- Ginger garlic paste – 1 and 1/2 tbsp divided
- Red Chili powder – 3 tsp divided
- Coriander powder – 2 tsp
- Turmeric Powder – 1/2 tsp
- Coriander leaves chopped – 2 tbsp
- Curry Leaves - 1 sprig
- Water – as required
- Salt
- Coconut oil or any other oil – 3 tbsp
- Crushed Fennel Seeds 1 tbsp

Instructions
- Pressure cook the squid for 10 minutes with salt, 1 tsp red chili powder, 1/4 tsp turmeric powder and 3/4 tbsp ginger garlic paste. Save the cooked water that is leftover for later use.
- Heat oil in a pan.
- Saute the onions until they turn pink and soft.
- Now add in the remaining ginger garlic paste and curry leaves and saute till the raw smell goes off.
- Add the tomatoes and saute well.
- Next, add turmeric powder, red chili powder and coriander powder. Mix well.
- Now add little water in which the squid was cooked.
- Once it starts to boil, add in the squid too.
- Check salt and add accordingly.
- Add in the crushed fennel seeds and chopped coriander leaves and stir.Cook closed for 5 minutes for the flavors to infuse.
- Have this scrumptious squid roast with appam, roti or even rice.
