Baked Stuffed Pita Bread

Baked stuffed Pita bread is wholesome, simple and easy! I have used, Chole masala and eggplant for stuffing. You can get creative and stuff with corn, paneer, chicken etc.

- In the bowl mix the water, honey and yeast together and let it sit for about five minutes. Next add the flours, salt, olive oil and mix for a few minutes until it forms a smooth dough.
- Make a ball and keep it in oiled bowl and cover it. Rest for an hour till it doubles in size. After this remove the air from the dough with your knuckles. Divide it into number of balls.
- Using a rolling pin, roll each ball into a circle of about 1/2 cm thickness. Lift and turn the dough frequently as you roll so it doesn't stick to your counter. Sprinkle with extra flour if needed.
- Now put a layer of roasted eggplants in the middle of the rolled dough. Top it with mashed Chole masala and cheese. Bring together all the sides in the center and seal tightly.
- Roll the stuffed dough again by applying less force else the stuffing might come out. Try to make it thin. Apply some oil over this rolled dough.
- Bake the stuffed Pita bread in a Preheated oven at 220 degrees for 5 -7 minutes. Cut it in half and serve with some green chutney or sauce. You can even brush it with some butter on top.
Notes
These stuffed pitas won’t fluff up much like the regular pita breads. Be sure to mash the chole, else you won’t be able to roll it.
