Instant Dosa With Leftover /Cooked Rice And Foxtail Millet

South India is ever famous for its crispy dosas and spongy idlis . There are numerous variety of dosas . How about an instant dosa which requires no soaking , no fermenting . Time consuming and a life saver , specially when there are sudden guests and there is no dosa batter in stock . Interesting ? To make these instant dosas super healthy , I have incorporated foxtail millet along with some leftover cooked rice . A healthy breakfast / snack for kids . Millets carry Protein , fibre and all other essential minerals and vitamins .

Ingredients
- Cooked rice 200 grams = 1 cup
- Foxtail millet flour 1/2 cup
- Rice flour 1 tablespoon
- Salt 1/4 teaspoon
- Water 1/4 cup or as required
- Baking soda 1/2 teaspoon
- Sesame oil 1/4 cup
- Fresh / sour curd 2 tablespoons

Instructions
- In a blender , grind cooked rice along with curd and little water to a smooth paste.
- Transfer the ground mixture to a bowl . Add rice flour and foxtail millet flour gradually while mixing . Add water and mix to form a smooth lumpfree batter . Add baking soda and salt . Mix . Cover and rest this batter for 15 minutes .
- After 15 minutes , the dosa batter looks frothy . Heat a griddle . Pour 1 ladleful batter and spread into crispy dosa . Smear 1 teaspoon sesame oil on the dosa and on the sides for a crispy texture . The dosa turns brow and crispy . It’s done .
- Likewise , cook rest of the dosas. Serve hot with chutney .
Notes
The batter shouldn’t be too thin nor thick . Adjust accordingly . Adding veggies in this recipe is optional.
