Recipe Notes

Additional Tips

  • For an extra-crispy texture, spread the beetroot dosa batter thinly and drizzle a few drops of oil or ghee around the edges while cooking; this also enhances the earthy beetroot flavor.
  • If you prefer a smoother dosa, blend the grated beetroot with a little water before mixing it into the batter to avoid fibrous bits and ensure an even color throughout.
  • Add finely chopped curry leaves or fresh coriander to the batter for an aromatic boost that complements the sweetness of the beetroot and the heat from the chillies.
  • Leftover beetroot dosa batter can be refrigerated for up to two days; stir it well before use, as beetroot tends to settle at the bottom.
