Ingredients
- 2 cup Idli Batter
- 1 Beetroot (small sized chopped roughly)
- 2 Green Chilli
- 2 Red Chillies
- 1 inch Ginger (sized chopped)
- 1 tsp Cumin Seeds (or jeera or jeera)
- Cooking (or oil oil for dosas)

Instructions
- In a mixer grinder, add the roughly chopped beetroot, green chillies, red chillies, ginger and cumin seeds and grind to a smooth batter. Do not add water while grinding. Set it aside.
- In a bowl, take the idli dosa batter. Add the ground beetroot paste and mix well.
- Heat a tawa on a medium flame. Pour one ladleful of batter and spread it to a round shaped dosa. Drizzle oil on the sides of the dosa and cook for 2 minutes. Flip on the other side and pour oil again on the sides. Cook till done.
- Serve healthy beetroot dosa hot with sambar or coconut chutney
- NOTES/TIPS: You can also add chopped onion along with beetroot for a nice and added flavour. Make the dosas according to the thickness desired.

- For an extra-crispy texture, spread the beetroot dosa batter thinly and drizzle a few drops of oil or ghee around the edges while cooking; this also enhances the earthy beetroot flavor.
- If you prefer a smoother dosa, blend the grated beetroot with a little water before mixing it into the batter to avoid fibrous bits and ensure an even color throughout.
- Add finely chopped curry leaves or fresh coriander to the batter for an aromatic boost that complements the sweetness of the beetroot and the heat from the chillies.
- Leftover beetroot dosa batter can be refrigerated for up to two days; stir it well before use, as beetroot tends to settle at the bottom.
