Potato And Drumstick Leaves Stir Fry

Drumstick leaves is well known for their medicinal properties and is said to normalize blood sugars. It is commonly used to make stir fry, dal, sambar, Drumstick Curry etc. Sharing a recipe of it which I paired with Potatoes.

Ingredients
  

  • Potatoes - 2
  • Drumstick leaves - A big bunch
  • Oil - 2 tbsp
  • Cumin - ½ teaspoon
  • Mustard Seeds - ¼ teaspoon
  • Garlic - 3 crushed
  • Urad dal - 1 teaspoon
  • Chana dal - 1 teaspoon
  • Curry leaves - 1 sprig
  • Green chillies - 2 slit
  • Turmeric powder - ¼ teaspoon
  • Chilly powder - ¼ teaspoon
  • Salt

Instructions
 

  • Take the potatoes and pressure cook for 2-3 whistles. Remove and cut into cubes and set aside.
  • Clean and wash the leaves thoroughly in water and drain the water off nicely. Set aside.
  • Heat oil in a pan. Add cumin, mustard, dals, garlic and fry till the dals turn golden. Add the curry leaves, green chillies and fry for 2 mins.
  • Add the boiled potatoes, salt, turmeric, chilly powder and fry for around 5 mins in low heat.
  • Add the leaves and fry stirring it continously in medium heat till they are done which will take around 5-10 mins. Take off the flame, serve with rice.
