Amaranth Stir Fry is a very simple recipe with simple and minimum seasoning. Amaranth leaves is a very nutritious green leafy vegetable and a diabetic friendly too. Naga culture use very minimum spices in our dishes. We mostly use local herbs in the dishes. Our dishes are mostly zero oil. Intact of lots of green vegetables and leafy greens are very common. This amaranth stir fry is a diabetic friendly recipe. Here the leaves and tender stem are stir fry with just green chilly and garlic seasoned with salt.
Include this in your meal and make the meal wholesome.

Ingredients
- 1 bunch Bunch Amaranth Leaves (amaranth)
- 2 Green Chillies (chopped)
- 3-4 Garlic (chopped)
- 1-2 tsp Salt (or as per taste)
- 1 tbsp Oil

Instructions
- Wash the amaranth leaves thoroughly in water. Chopped the leaves along with tender steam. Chop green chillies and garlic too.
- Heat oil in a pan. Add chopped green chilly and garlic and saute for a min.
- Add the chopped amaranth and season with salt.
- Mix well and stir fry in high heat for 10-12 mins.
- Amaranth Stir Fry is ready to be served. Enjoy
