  • In a small bowl, combine the turmeric powder, cumin powder, coriander powder, red chili powder, and ginger paste. Add a little water to form a smooth spice paste. Set aside.

  • Heat the mustard oil in a pan or pot over medium heat. Add the panch phoran and allow it to sizzle for a few seconds. This releases the spices' aroma and adds depth of flavor.

  • Add the Malabar spinach to the pan and sauté for a minute until it starts to wilt. Then, add the prepared spice paste and mixed vegetables. Stir well to coat everything evenly.
  • Add salt to taste. Cover the pan and cook for a few minutes, or until the vegetables are tender. Covering the pan traps steam and helps the vegetables cook quickly and evenly.
  • Finally, add the dried moong dal badi to the curry. Stir gently and cook for another minute to heat through. Serve hot with steamed rice.
