Malabar Spinach Soup

Malabar spinach is high in Vitamin A,C, Iron and Calcium. It has a high amount of protein for a plant and is also good source of magnesium, Phosphorus and Potassium. Another good reason to eat malabar spinach is that it has a good amount of antioxidants. Totally it is good for health.

Ingredients
- 25 leaves Malabar spinach
- 1 Sweet potato small
- 1 tbsp Garlic finely chopped
- 1 tbsp Ginger finely chopped
- 2 tbsp Onion chopped
- 2 tbsp Capsicum chopped
- 2 tbsp Carrot chopped
- 2 tbsp Green beans chopped
- 3 tbsp Cabbage chopped
- 2 tbsp Coriander leaves chopped
- 2 tbsp Lemon juice
- 6 Curry leaves
- 1 tbsp Green chili sauce
- Salt to taste
- 2 tbsp Pepper powder
- 1/2 tbsp Jaggery powder option
- 1 tbsp Butter
- 3 tbsp Fresh cream

- Ingredients
- Take a cooker and add Malabar spinach, sweet potato and add three cups of water, close the lid and cook them.
- Let it cool and then nicely grind them
- Heat the kadai, add butter or oil.
- Add ginger and garlic and little fry them.
- Add onion, mix nicely and fry them.
- Add capsicum, beans, carrot, cabbage, green chili sauce and salt and mix nicely.
- Add two cups of water and let it boil nicely
- Add grinded mixture and mix and add pepper powder, coriander leaves & jaggery (optional) and mix.
- Once it is boiled, switch off the stove and add 2 spoons of fresh cream and mix.
- Pour it into serving bowls and add some fresh cream. Serve with papad, crotons or crispy noodles. Salad can be served if required.
Notes
Instead of malabar spinach and sweet potato you can use spinach (palak leaves) and potato. But Potato is not diabetic friendly.
