Ingredients
Spice Paste
- 1 tsp Turmeric Powder
- 1 tsp Cumin Seeds
- 1 tsp Coriander Powder
- 1 tbsp Onion Paste
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
Vegetables and Oil
- 250 gm Malabar Spinach
- 1 bowl Vegetables mixed
- 2 tbsp Mustard Oil
Seasoning and Spices
- 1 tsp Bengali Five-Spice
- Chillies for tempering, red
- 1 tsp Chili Powder red
- Salt to taste
Instructions
- In a small bowl, combine the turmeric powder, cumin seeds, coriander powder, onion paste, ginger paste, and garlic paste. Add a little water to form a smooth paste. This spice paste forms the flavor base of the curry.
- Heat the mustard oil in a pan or pot over medium heat. Add the panch phoran and red chilies. Allow them to sizzle for a few seconds until fragrant. This tempering process releases the aromas of the spices.
- Add the prepared spice paste to the pan and sauté for a minute until fragrant. Then, add the Malabar spinach and mixed vegetables. Stir well to coat the vegetables with the spice paste.
- Add the red chili powder and salt to taste. Stir well to combine. Cover the pan and cook for a few minutes, or until the spinach and vegetables are tender. Check for doneness by piercing a piece of vegetable with a fork.
- Once cooked, remove from heat and serve hot with steamed rice. The vibrant color and rich flavors of the curry complement the rice perfectly.
