Ingredients
For the Gatta Dumplings
- 2 cup Poi Leaves finely chopped
- 2 cup Gram Flour besan
- 1 1/2 tsp Salt adjust to taste
- 1 tsp Chili Powder red
- 1/4 tsp Asafoetida heeng
- 1 tbsp Chili finely chopped, green
- 1 tbsp Clarified Butter
- 1 tbsp Lemon Juice
- Water Water as needed to form a dough
For the Masala Sauce
- 2 tbsp Oil
- 1 tsp Cumin Seeds jeera
- 2 tbsp Onion finely chopped
- 2 Tomatoes finely chopped
- 1 tsp Turmeric Powder haldi
- 1 tbsp Coriander Powder dhania
- 1 tsp Mango Powder amchur, dry
- 1 1/2 tsp Salt adjust to taste
Instructions
Prepare the Gatta Dumplings
- Mix gram flour, poi leaves, salt, red chili powder, asafoetida, ghee, and lemon juice in a bowl. Gradually add water to form a soft, pliable dough.
Cook the Gatta Dumplings
- Bring a large pot of salted water to a boil. Add 1 teaspoon of oil to the boiling water. Divide the dough into small portions and roll them into small balls or dumplings. Gently drop the gatta into the boiling water. Cover and simmer for 15-20 minutes, or until the gatta are cooked through and float to the surface.
Prepare the Masala Sauce
- Heat oil in a pan. Add cumin seeds and let them splutter. Add finely chopped green chilies and onions, sauté until softened.
Simmer the Sauce
- Add turmeric powder, red chili powder, and coriander powder. Stir well and cook for a minute. Add chopped tomatoes and cook until softened, about 5-7 minutes.
Combine and Serve
- Add the cooked gatta to the masala sauce. Stir gently to combine. Add salt and amchur powder. Cook for another 2-3 minutes. Garnish with finely chopped green chilies. Serve hot with tea or coffee.
