  • Sift the gram flour into a bowl. Gradually whisk in the beetroot juice until you achieve a thin, flowing batter. This consistency is crucial for creating light and crispy boondhi.
  • Heat the ghee or oil for frying in a deep pan over medium heat. Place a perforated ladle (boondhi ladle) over the hot oil. Pour a ladleful of batter over the ladle, spreading it gently. The batter will fall through the holes and form small droplets in the oil.
  • Fry the boondhi until golden brown and crispy. Remove with a slotted spoon and transfer to a vessel lined with paper towels to absorb excess oil. Cover to keep warm and soft.
  • Repeat the frying process with the remaining batter.
  • In a separate pan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Continue to cook until the syrup reaches a one-string consistency. This is achieved when a drop of syrup, when stretched between your thumb and forefinger, forms a short thread. This syrup binds the boondhi together.
  • Remove the syrup from the heat and stir in the remaining ghee, roasted almonds, and raisins. Gently fold in the fried boondhi, ensuring they are evenly coated in the syrup.
  • While the mixture is still warm, take small portions and shape them into round ladoos. The warmth helps them hold their shape.
  • Allow the ladoos to cool completely before storing them in an airtight container. They can be stored at room temperature for up to a week.
