Ingredients
 

Dry Ingredients

  • 2 cup Rajgira Seeds amaranth seeds, approximately 300g. ensure they are fresh and clean.
  • 500 gm Jaggery use good quality jaggery, preferably organic. can be substituted with organic cane sugar for a different flavor profile.

Optional Ingredients

  • 2 tbsp Cashews chopped coarsely. adjust quantity as per preference.
  • 2 tbsp Raisins optional, adds sweetness and texture. use seedless raisins.

Other Ingredients

  • 4 tsp Ghee use good quality ghee for best flavor. can substitute with coconut oil or unsalted butter.
  • 3 cup Water use for dissolving the jaggery. adjust as needed to achieve desired consistency.

Instructions
 

Roast the Rajgira Seeds

  • Dry roast the rajgira seeds in a heavy-bottomed pan over medium heat until they puff up and turn light golden brown. This usually takes 8-10 minutes. Be careful not to burn them.

Prepare the Jaggery Syrup

  • In a separate pan, heat the ghee. Add the jaggery and 3 cups of water. Stir well until the jaggery dissolves completely over low heat. Cook until a soft-ball stage is reached. (This is when a small amount of syrup forms a soft ball when dropped in cold water.)

Combine and Mix

  • Add the roasted rajgira seeds, cashews, and raisins (if using) to the jaggery syrup. Mix well and quickly to combine everything evenly. Remove from heat.

Shape the Ladoos

  • Lightly grease your palms with ghee. Take small portions of the mixture and roll them into small or medium-sized balls (ladoos). The size is up to your preference.

Cool and Serve

  • Allow the ladoos to cool completely before storing them in an airtight container. These will stay fresh for about a week at room temperature.

Expert Tips for Perfect Rajgira Ladoos

  • For a richer flavor, toast the cashews and raisins lightly before adding them to the jaggery syrup.
  • If the mixture is too dry, add a little more ghee or water to achieve the desired consistency for rolling into ladoos.
  • Don't overcook the jaggery syrup, as this can lead to a hard and brittle final product. The consistency should be slightly sticky but workable.
  • For a spiced variation, add 1/2 teaspoon of cardamom powder or a pinch of nutmeg to the jaggery syrup while it is cooking. This adds a fragrant warmth to the ladoos.
