Instructions

Dry Roast the Semolina

  • Dry roast the semolina in a pan over low heat until it turns lightly golden and has a fragrant, nutty aroma. Be careful not to burn it.

Grind Semolina

  • Once cooled, grind the roasted semolina into a coarse powder using a mixer grinder. Do not grind it into a fine powder, a slightly coarse texture is desirable.

Mix Dry Ingredients

  • Add the powdered sugar and cardamom powder to the mixer grinder. Pulse until well combined with the semolina.

Combine Wet & Dry Ingredients

  • Pour the semolina mixture into a large bowl. Add the melted ghee slowly, mixing gently until a wet sand-like consistency is achieved. Add more ghee if the mixture is too dry. Stir in the fried nuts.

Shape the Ladoos

  • Allow the mixture to cool slightly. Lightly grease your palms with ghee. Roll the mixture into small, round ladoos.

Recipe Notes

Expert Tips for Perfect Rava Ladoos

  • Toasting the semolina is crucial: This step enhances the nutty flavor and aroma of the ladoos.
  • Don't over-grind the semolina: A slightly coarse texture is preferred for a better mouthfeel.
  • Adjust ghee as needed: The amount of ghee may vary depending on the type of semolina and powdered sugar used.
  • Cool the mixture before shaping: This allows the ladoos to hold their shape better.
