Ingredients
 

Pasta

Shrimp & Stock

  • 10 Shrimp peeled and deveined; reserve shells for stock
  • 300 ml Shrimp Stock 1/2 small onion (sliced), and 1 stalk celery (sliced); simmer for 15-20 minutes, made from shrimp shells, water

Sauce Ingredients

Seasoning

  • 3-4 gm Salt
  • 1 pinch Pepper black, freshly ground

Instructions
 

Prepare the Shrimp Stock

  • Bring 300ml of water to a boil. Add reserved shrimp shells, ½ small sliced onion, and 1 stalk sliced celery. Simmer for 15-20 minutes, then strain.

Cook the Pasta

  • Bring a large pot of salted water to a boil. Add spaghetti and cook al dente (8-10 minutes) or until fully cooked (12 minutes).

Sauté the Shrimp and Tomatoes

  • Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant. Add shrimp and cook until pink and opaque (about 2-3 minutes per side). Add halved datterini tomatoes and sauté for another 2 minutes.

Create the Sauce

  • Pour in shrimp stock and bring to a simmer. Reduce heat and simmer for 5 minutes to allow the sauce to thicken slightly.

Combine and Serve

  • Add cooked spaghetti to the skillet with the shrimp and tomato sauce. Toss to coat evenly. Stir in butter, salt, pepper, and chopped basil.

Plating and Garnish

  • Serve immediately. Garnish with chopped parsley and a drizzle of olive oil.
