Ingredients
Dry Ingredients
- 100 gm Edible Gum gond
- 100 gm Whole Wheat Flour whole
- 2 cup Sugar ground
- 2 tsp Cardamom elaichi, ground
- 50 gm Coarsely Almonds ground
Wet Ingredients
- 1 1/4 cup Ghee
Instructions
- In a pan or kadhai, heat 2 tablespoons of desi ghee. Add the edible gum (gond) and roast until it puffs up and becomes crispy, about 5 minutes. This blooming process allows the gond to develop its characteristic light and airy texture.
- Remove the roasted gond from the heat and set aside to cool slightly. Once cooled, grind the gond into a coarse powder using a mixer.
- In the same pan, combine the ground gond, ground sugar, ground cardamom, and coarsely ground almonds. Mix well.
- In the same pan, add the whole wheat flour. Roast for a few minutes over medium heat, stirring constantly to prevent burning. Add another 2 tablespoons of ghee and continue roasting until the flour releases a fragrant aroma, about 5-8 minutes. Roasting the flour enhances its nutty flavor and helps create a smooth texture in the ladoo.
- Add the ground gond mixture to the roasted flour and mix thoroughly. Cook for another 5-8 minutes, stirring continuously, until the mixture is well combined.
- Gradually add the remaining ghee, 1 tablespoon at a time, while continuing to cook and stir the mixture. Cook until the mixture thickens and reaches a consistency where it can be easily rolled into ladoos. The mixture should be moist enough to hold its shape but not too wet.
- Turn off the heat. Grease your palms with a little ghee and begin shaping the warm mixture into ladoos. If the mixture becomes too dry to roll, add a little more ghee as needed.
- Store the Gond Ladoos in an airtight container at room temperature to maintain their freshness.

- To ensure the edible gum (gaund) puffs up light and crunchy, fry it in small batches over medium heat. Overcrowding or high heat can prevent even puffing and lead to burnt pieces.
