Carrot and Bell pepper Salad made in Thai Style is a wholesome meal in itself if you are on diet. detox and weight-loss mission.With simple yet exotic garlic-chilli dressing loaded with peanuts to fulfil the protein need. This is a perfect Summer Salad. A bowl of Carrot and capsicum salad is enough for your lunch or when you want to munch a healthy snack. Add the skinless dry roasted peanuts to give the crunchiness to the salad.

Ingredients
  

  • Carrot - 2
  • Bell Pepper green - 1
  • Peanuts - 1/3 Cup
  • For the Garlic Chilli Salad dressing
  • Lemon juice -1 tablespoon
  • Garlic pods - 5-6
  • Green chilli - 1
  • Salt

Instructions
 

  • Rinse the carrots and bell pepper, Peel the carrot ( no need to peel it if the carrots are organic). Cut them into equal size small cubes. Combine carrots and green bell pepper.
  • Dry roast the peanuts and let it cool down. Rub it between your hands to remove the skin. Pound it and mix it with carrot and bell pepper. I usually keep roasted and skinless peanuts in my kitchen as it goes handly with lots of salads.
  • For the Tangy Garlic - Chilli dressing -
  • Peel the garlic pods and chop it.
  • Slit the green chilli and remove the seeds, chop it too.
  • Squeeze the lemon juice ( 2 tablespoon) on chopped garlic and green chilli and crush in mortar and pestle. Add Salt.
  • Keep the dressing aside for 10 minutes.
  • Pour the dressing after 10 minutes on the veggies, and give a nice stir. Taste and season accordingly.

  • Let the saald sit for another 20 minutes and serve it

Notes

Lot of people use Vinegar for dressing but I usually avoid it as its processed and lemon juice is fresh.
A lot of salad dressings have sugar in it which can be completely avoided as it adds calories to the dressing and hence the salad. 
Salad should be for detox and weight-loss or when you want to relax your system, so going natural and sugar-less is the key.
