Ingredients
- cup Coconut Powder dry roast half
- 1 tsp Cumin Seed
- 1 tsp Urad Dal
- 1 tsp Seeds seasme
- 1 tsp Chana Dal bangal horse
- 2 tsp Coriander Seeds
- 2 tbsp Roasted Peanuts
- 5-6 Red Chillies dry whole
- 7-8 leaves Curry
- 1 tsp Asafoetida
- 1 tsp Fenugreek Seeds
- 1 tsp red chili powder
- 1 tsp Turmeric Powder
- 2 Green Chillies
- 4 cloves Garlic
- 1 Onion
- 1 tsp Garam Masala
- 1-2 tsp Salt or as per taste
- 1/4 cup Coriander finely chooped
- Oil

Instructions
- take a pan , add 2 tsp oil , now add seasme seeds ,cumin seeds ,chana dal ,urad dal , roasted peanuts ,fenugreek seeds ,dry red chilli ,curry leaves and coriander seeds one by one . saute it for 5 minutes and turn off the gas
- take a grinder and grind all above spices with using very little water and make fine paste . grounded spices masala is ready . keep this paste aside .
- now wash eggplants and remove the stems . now make 2 vertical cut through the center of the eggplants without actually cut into pieces . keep them in water aside.
- now grind onion ,garlic cloves and green chilli and coriander leaves into a grinder and make smooth paste .take a pan add oil , now add onion paste and cook until mix leaves the oil . add red chilli powder ,turmeric powder and salt as per taste.
- now add grounded spices masala paste into this and mix all ingredients well . turn off the gas . . eggplant stuffing is ready . let it cool .
- now we start stuffing our eggplant . take out eggpants from the water . dry them with tissue or napkin . now stuff these eggplants with above spices masala .
- now take a pan or kadai , heat 2 tbsp oil ,add asafoetida . now gently place the stuffed eggplants . stir them gently after 5 minutes . now add little water and cover it with lid . cook these eggplants until they becomes tender .
- garnish with chopped corainder leaves and sprinkle some garam masala powder,serve hot with bhakri or fulka .
