Ingredients
- 3 leaves Spinach finely chopped
- 1 gm Flour or besan or besan
- 1 tsp Salt or as per taste
- 2 tbsp Oil
- 1 tbsp Cumin Seeds crushed
- 1 tbsp Chilli Flakes
- 1/2 tsp Turmeric Powder haldi
- 2 Eggs
- 1 Onion chopped
- 3 leaves Coriander dhania, chopped
- 7 leaves Curry Leaves chopped
- 1 tsp Ginger Garlic Paste
- 1 tsp Baking Soda
- 3 tbsp Water optional 3 tbsp
Instructions
- Combine all the ingredients in a wide mouthed bowl and make a thick but flowing batter. Add little water if needed.
- More or less water depends upon the quality of the gram flour. I used nearly 3-4 tbsp of water. Keep it aside for 15 minutes.
- Meanwhile grease the idli plates and heat up the water in a vessel for steaming.
- Pour 2 tbsp of the batter in each groove of the plate and steam for around 20 mins.
- Trust me they are so soft and so yummy that no one will ever find out that there is spinach in them.
- Serve them steaming hot with imli chutney and any other dip of your choice. I served these for dinner with green chutney and imli chutney both.

Additional Tips
- For extra crunch, sprinkle a thin layer of roasted sesame seeds or crushed peanuts on top of the batter before steaming; they’ll toast up beautifully and add a nutty note.
- If you prefer a vegan version, simply replace the eggs with a flaxseed or chia seed gel (1 tablespoon ground seeds mixed with 3 tablespoons water per egg) to maintain binding and moisture.
- After steaming, let the discs cool slightly and pan-sear them with a touch of oil for a minute on each side to create a crispier exterior while keeping the inside soft and flavorful.
- These discs freeze well—layer them between parchment paper in an airtight container and reheat by steaming or microwaving for a quick, healthy snack anytime.
