For barbecue sauce

  • Take a lamb rack, clean it nicely. Take out three chops from that and marinate with olive oil, salt, pepper, garlic and rosemary and keep aside.

For barbecue sauce

  • Rake a pan over low heat, put olive oil, gherkins and sautรฉ it then add lemon juice, vinegar and brown sugar, Worcestershire sauce, tomato sauce and mustard powder and stir well.
  • Simmer for10 min, remove from heat, allow to cool.

For Mash Potato

  • Wash the potato, peel the potato, dice the potato in a big chunk.
  • Take a pot, fill up the water and bit salt and put the potatoes in the pot and boil the potatoes until it become very soft
  • Then strain the potatoes with the strainer and mash it nicely.
  • Take a pot add bit of butter and cream once it gets boil add the mash potato in it and season with salt and pepper.
  • Now On your griller, take out your lamb chops and grill it nicely on both the sides and put it in the oven for 10 min @ 180 degree C or you can cook it to your desired consistency.
  • Once it is done, pour the barbecue sauce in a hot sizzling pan , reduce a bit, add a bit of butter and make the glazing kind of consistency.
  • Now add your lamb chops in it and glaze the cook a bit until it get the glazing effect.

How to plate

  • Put mash potato on the plate and make a nice bed of it. Add baby carrot and on the side put the barbecue glazed lamb chops . Itโ€™s ready to eat enjoy the dish
