Ingredients
- Thinly sliced onions from 4 onions
- Finely chopped tomatoes from 6 to 8 tomatoes
- Slitted green chillies 2
- Red chilli powder 1 tea spoon full
- Cumin seeds 1 tea spoon
- Curry leaves few
- Coriander seed powder 1 tea spoon
- Turmeric powder 1/4 tea spoon
- Salt
- Oil 4 table spoons

Instructions
- Heat a heavy bottomed or Non stick pan with oil. Make the cumin seeds to splutter and add the curry leaves. Now fry the onions till they turn out dull and light golden brown.
- Add the tomatoes and stir. Now add all other powders and salt mentioned above and keep stirring patiently. Do not keep the flame to low.
- You can see tomatoes becoming mushy ,giving out water. Keep frying further. When everything binds together and stuff becomes dry you can watch the oil coming out from the stuff and the tomato fry comes rolling down without sticking to the bottom.
- Switch off the stove. Adding a small piece of jagerry while stirring enhances the taste.
Notes
This can also be spreaded on bread toasts and relished.
