Ingredients
Mushrooms & Vegetables
- 200 gm Button Mushrooms
- 100 gm Bell Peppers julienned; green or yellow bell pepper can be substituted, red
- 2 clove Garlic minced
Sauce & Marinade
- 3 tbsp Pineapple Juice or substitute with vegetable broth
- 1 stalk Lemongrass finely chopped
- 0.5 tsp Peppercorns crushed, black
- 1.5 tsp Salt or to taste
- 0.5 tsp Garam Masala
- 0.5 tsp Coriander ground
- 1 tbsp Corn Flour cornstarch
Liquid
- 100 ml Water
Instructions
Prepare the Marinade
- Wash and clean the mushrooms thoroughly. In a bowl, combine the julienned bell pepper, minced garlic, pineapple juice, crushed peppercorns, garam masala, and coriander. Mix well and let it marinate for at least 30 minutes, covered.
Sauté Aromatics
- Heat olive oil in a pan over medium heat. Add the cinnamon stick and dried red chili; cook for about 1 minute until fragrant.
Cook the Mushroom Mixture
- Add the marinated mushroom mixture to the pan. Cook for 5-6 minutes, stirring continuously, until the mushrooms are softened and lightly browned.
Thicken and Finish
- Stir in the water and cornflour. Add the chopped lemongrass. Continue cooking for another 3-4 minutes, or until the sauce has thickened to your desired consistency. Taste and adjust seasoning as needed.
Serve
- Serve hot, garnished with fresh cilantro (optional), alongside white rice or your favorite side dish.
