  • Wash and clean the mushrooms thoroughly. In a bowl, combine the julienned bell pepper, minced garlic, pineapple juice, crushed peppercorns, garam masala, and coriander. Mix well and let it marinate for at least 30 minutes, covered.

Sauté Aromatics

  • Heat olive oil in a pan over medium heat. Add the cinnamon stick and dried red chili; cook for about 1 minute until fragrant.

Cook the Mushroom Mixture

  • Add the marinated mushroom mixture to the pan. Cook for 5-6 minutes, stirring continuously, until the mushrooms are softened and lightly browned.

Thicken and Finish

  • Stir in the water and cornflour. Add the chopped lemongrass. Continue cooking for another 3-4 minutes, or until the sauce has thickened to your desired consistency. Taste and adjust seasoning as needed.

Serve
