- 200 gm Button Mushrooms
- 100 gm Bell Peppers capsicum
- 1 Onion medium
- 1.5 Chilies green

- 1 tsp Coriander ground
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder red
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1 tsp Garam Masala

- 2 Tbsp Tomato Purée
- 2 Tbsp Mustard Oil
- 1.5 tsp Salt or to taste
Instructions
- Wash the mushrooms thoroughly under running water. Briefly blanch them in boiling water to clean them effectively. Chop the onion, bell pepper, and green chilies.
- Heat the mustard oil in a pan or skillet over medium heat. Add the ginger and garlic pastes and sauté for a few seconds until fragrant. This blooms the flavors of the ginger and garlic.
- Add the chopped onion, bell pepper, and green chilies to the pan. Sauté for a few minutes until the onions soften and become translucent.
- Add the mushrooms to the pan and stir well to combine with the other vegetables. Sauté for another few minutes until the mushrooms start to brown slightly.
- Add the turmeric powder, red chili powder, ground coriander, and cumin seeds to the pan. Stir well to coat the vegetables with the spices. Sautéing the spices with the vegetables helps to release their flavors and create a more complex taste.
- Add the tomato purée, salt, and garam masala to the pan. Stir well to combine all the ingredients. Add a splash of water if needed to prevent sticking.
- Reduce the heat to low, cover the pan, and simmer for 5 minutes, or until the vegetables are tender but still retain a slight bite. Covering the pan traps the steam and helps to cook the vegetables evenly.
