Vegetables

  • 1 Tomato finely chopped (approx. 90g), ripe
  • 2 cups Mushrooms diced (approx. 300g)
  • 350 gm Peas frozen or fresh, green, pre-boiled, shelled

Instructions
 

Sauté Aromatics

  • Heat butter or oil in a pan or pot over medium heat. Add cumin seeds and cook until they begin to crackle. Add sliced onions and sauté until lightly golden.
  • Add minced garlic and green chilies; sauté until fragrant and onions are golden brown.

Add Tomatoes & Spices

  • Stir in chopped tomatoes, salt, chili flakes, and coriander powder. Cook until tomatoes soften slightly.

Add Mushrooms & Peas

  • Add the diced mushrooms and sauté for 3-5 minutes, until slightly softened. Stir in the pre-boiled peas.

Finish & Serve

  • Add oregano and cook for 1-2 minutes, or until most of the liquid has evaporated. Remove from heat and sprinkle with chaat masala. Serve hot with roti, naan, or toasted bread.
